Is there a way to transfer email in Thunderbird to the Mac mail app?

Sure. See http://kb.mozillazine.org/Export_to_Mail.app if you don't use IMAP accounts.

I hate to ask a dumb question, but how do I ensure that I'm not using IMAP accounts?

Look at the accounts's server settings . This is the pane that specifies the username , mail server, connection security, authentication method etc. Server Type: IMAP Mail Server means its a IMAP account. Server Type: POP Mail Server means its a POP account. That is the easiest way to tell them apart. There is a lot of overlap in what server settings each account has, but there are also some noticeable differences. IMAP accounts for example have a "When I delete a message" setting while POP accounts have a "Fetch headers only" and "Leave message on server" field.
