GDPR and email hacking has us all worried.

First, I'd like to delete old stored addresses, and so I'd like to sort them by the date they were stored or last used.

Second, I'd like some way to protect my address book and stored emails so the remaining personal information can not easily be harvested by malware.

Finally, and maybe this is easiest, I'd like new contacts from incoming or outgoing emails not to be stored by default, but on request.

Any help gratefully received.

That first is going to be problematic as there is no displayed date of entry or change in the address book display.
Second, see this article -- http://kb.mozillazine.org/Protect_the_profiles_contents
Third, see menu path Tools->Options->Composition->Addressing->uncheck "Automatically add outgoing..."

The MoreFunctionsForAddressBook add-on adds a column to show the Last modified date in Unix format, which is maybe not the most convenient presentation.

The CardBook add-on supports using the CardDAV protocol to use remote contacts stored by your email provider. Does your email provider support CardDAV? Many do, its become popular.

You would have to verify it doesn't create a local cache of the contacts but I believe this would let you have empty abook.mab and history.mab address books in your profile.
