Theere seems to be no way to delete a filter if you want to get rid of it? You can turn it OFF - but not get rid of it.

Also, it would be nice to have a cearer way to define filtering just by domain name - i.e. if I want all emails from domain foo.com to go into the foo folder, for example.

Here I go to Tools -> Message Filters, highlight the appropriate filter and click the "delete" button at the right.

OK - I admit it. I'm an idiot.

Seems I was bitten by the "window not opening to full size" bug I reported earlier and thus missed the delete button. Thanks for pointing this out and here's hoping this gets fixed in the near future.
